The overall goal of this continuing project is to improve the competitiveness of Delmarva soybeans through the development of value-added applications. The specific objectives are to:
• Characterize physicochemical attributes associated with the processing requirements of soy okara as an ingredient;
• Develop a natural product using okara, a waste product after extraction of the water extractable fractions used to produce soymilk and tofu; and
• Assess the market potential of the products developed by analyzing cost effectiveness for commercial production and the size of the potential market.
